Serves: 6-7 Thalipeeths
Sabudana/Tapioca pearls: ⅔ cup
Medium or large potatoes, boiled, peeled and mashed: 2
Cumin powder (jeera): ½ tsp
Peanuts, roasted and coarsely ground: 4 tbsp
Ginger, finely chopped or grated: ½ inch
Chopped coriander leaves: ¼ cup
Lemon juice: 1 tsp
Sugar: 1 tsp or as required
Rock salt as required
Step 1: Pick and rinse the sabudana well till the you get transparent water when rinsing. Soak them overnight in enough water. The next day, drain them really well and make sure there is no moisture in them.
Step 2: Add the mashed potatoes and all the ingredients to the soaked sabudana. Mix well.
Step 3: Heat 1 or 2 tsp of oil in a non stick frying pan. Apply some oil on your palms.
Step 4: Take some portion from the mixture and flatten it with your palms. You can also flatten on a ziplock bag.However, its easier to flatten with my palms.
Step 5: Place the flattened round on the frying pan.Fry till both sides are golden brown and crisp.
Step 6: Serve Sabudana Thalipeeth with Chutney or Plain Curd.
